Healthy Lasagna | Gluten & Dairy Free. Lasagna might not be the healthiest, but I'm going to show you a healthier way to make it. You won't even have to boil the noodles!
What You’ll need:
9x12 inch pan
Oven ready Gluten free brown rice lasagna noodles
Half of a medium sized white onion, diced
1 cup water
1 lb. ground turkey (99% lean)
¾ cup mushrooms, choppped
18 oz. can of diced organic tomatoes, no sugars added
6 oz. can organic tomato paste
½ tbls. + 1 t. garlic powder
½ tbls. Oregano
1 tbls. Italian seasoning
½ t. salt
3/4 cup dairy free sour cream
3/4 cup dairy free cream cheese
1 1/2 cup dairy free mozzarella cheese
1. In a large pot combine onions, mushrooms, water, and ground turkey. Cook until turkey is done. Drain off as much water as you can.
2. In the same pot add diced tomatoes, tomato paste, 1 tsp. garlic powder, handful of fresh parsley and fresh basil. Add salt to taste. Simmer uncovered on medium-low heat for about 30 minutes or until most of the liquid is gone, stirring occasionally. This will prevent your lasagna from being watery.
3. Preheat oven to 375 degrees.
4. While meat mixture simmers, in a medium sized bowl combine sour cream, cream cheese, egg, ½ tbls. oregano, ½ tbls. garlic powder, ½ tbls. Italian seasoning and mozzarella cheese, then set aside.
5. Once meat mixture is done, remove from stove. In a 9x13 inch pan cover the bottom of the pan with about half of the meat mixture.
6. Lay noodles on top, and cover them with cheese mixture followed by another layer on noodles.
7. Add the rest of the meat mixture over noodles, being sure to cover every part of the noodle so they don’t dry out while in the oven.
8. Add a cup or more of mozzarella cheese to the top. Sprinkle 1/2 tbls. of Italian seasoning, and a handful of fresh parsley over cheese. Cover with foil.
9. Bake for 20-30 minutes, then remove foil and bake for another 10 minutes.
10. Let stand for at least 10 minutes before serving.
